BILL'S RICE RECIPE




3 3/4 cups chicken stock
2 cups long-grain rice
1/2 teaspoon cinnamon
2 1/2 teaspoons olive oil
1 medium onion chopped
1/2 cup cherry flavored crasins (or sultana raisans)
1/4 cup pine nuts
1/8 cup slivered almonds
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons good-quality curry powder

Saute onion in pan with olive oil for five minutes. Add rice and saute
for three more minutes. Add the remaining ingredients (into covered pan
or into rice steamer) and cook till done-about 18 minutes.

You could replace the nuts in this recipe with any nut you favor such as
cashews or pecans. You can substitute other dried fruit depending on your
taste. Carrots or peas are a nice addition or make it a complete meal by
adding some meat/tofu to the dish.
