Angela's Pie Crust


1 and 3/4 cup flour
1 teaspoon salt
2/3 c. butter.
Ice water.


Mix flour and salt. I slice finely the butter into the flour. then chop the mixture with two knives.
Then I take a pastry fork and smash the mix till there aren't any large lumps of butter.

Small ones are ok. I add some water and stir with the fork. If it is difficult to stir with the fork, I use my bare hands. I add water till there aren't any bits of flour left, but the dough is barely wet enough for that to happen. I smoosh it into a ball and let it rest in plastic wrap at least a half hour in the frig. :)
