BILL'S BLUEBERRY SCONES
Makes eight scones
2 cups unbleached flour
4 T Sugar (divided)
2 t baking powder
1/4 t baking soda
1/2 cup cold butter, slivered and chopped into small pieces
1/2 cup frozen blueberries that you have grown yourself
1 T grated orange or lemon zest
1/2 cup buttermilk
We grow our own blueberries so you can come and raid our bushes if you need some!
Mix together flour, 3 T of sugar, baking powder and soda.
Blend in by hand or by mixing fork your butter till you get nice pebbly dough. Mix in your zest and your blueberries. Try not to destroy your blueberries. Barely mix in the buttermilk.
Turn out the dough onto a floured surface and knead till it just comes together.
Divide dough in half. then barely pat out the dough and flatten it. Cut the flattened round into fourths and put on an ungreased baking sheet. Repeat with the second half of the dough.
Take the remaining tablespoon of sugar and sprinkle it over the top of the scones.
Bake in a 375 degree oven for 30 minutes. Eat them with jam and some hot lemon tea while you watch the rain fall and contemplate just how good your life is.
