SUE'S CARROT CAKE

1 & 1/2 CUPS OIL
2 CUPS SUGAR
4 EGGS, BEATEN UNTIL CREAMY
1 TSP VANILLA
2 CUPS ALL PURPOSE FLOUR
2 TSP CINNAMON
2 TSP BAKING SODA
1 & 1/2 TSP SALT
3 CUPS GRATED CARROTS (APPROX ONE POUND BAG)
1 CUP CHOPPED NUTS (PECANS OR WALNUTS)

Sift together the flour, cinnamon, baking soda and salt. Cream the oil, sugar, eggs and vanilla until creamy, add the dry sifted ingredients, then add the grated carrots and nuts. Grease and flour a 9X13 oblong pan, or 2 round cake pans, pour in the batter and bake at 350 for 45 minutes or until done. Cool.

CREAM CHEESE FROSTING

8 OUNCES CREAM CHEESE
ONE POUND POWDERED SUGAR
1/2 CUP BUTTER
2 TSP VANILLA

Beat all together until creamy and smooth. Chill to spreading consistency, frost cake and then refrigerate.
