CONGRI
1/2 lb. black beans ( you can use 2 cans 16 ounce each-Goya is better )
2 cups of rice
3 strips of bacon
2 cups water
1 green pepper chopped
1/2 onion chopped
3 tablespoons olive oil
2 cloves garlic , chopped
1 teaspoon salt,(you can add more later if needed)
Pinch of oregano
If you use dry beans in a bag then you need to soak them overnight, and cook them until tender in the same water.
If you use the canned beans then: fry the bacon,onion,green pepper, and garlic in the olive oil,
add the beans,salt, the water and rice. All in the same pot. Cover and cook over medium heat until rice is tender.
If you own a rice cooker, then you can put the beans and rice with the water, and the already fried onion, garlic and green pepper in the rice cooker, it has to be a rice cooker not a crock pot,
It serves 6 with roast pork.
