SWEET POTATO SOUFFLE'
FILLING
2 CANS SWEET POTATOES ( 1 POUND 13 OUNCES EACH)
1/2 CUP BUTTER
3/4 CUP SUGAR
2 EGGS
1/2 CUP MILK
1/2 TEASPOON CINNAMON
1/2 TEASPOON NUTMEG
BLEND THE ABOVE INGREDIENTS TOGETHER UNTIL PUREED. I USE A FOOD PROCESSOR BUT AN ELECTRIC MIXER WORKS WELL TOO. SPREAD THE MIXTURE IN A GREASED ( I USE PAM SPRAY ) OBLONG PAN. BAKE FOR 20 MINUTES AT 400. WHILE IT'S BAKING, MIX THE TOPPING TOGETHER.
TOPPING
1/2 CUP MELTED BUTTER
1/2 CUP BROWN SUGAR
2 CUPS CRUSHED CORN FLAKES
1 CUP CHOPPED PECANS
MIX THE TOPPING TOGETHER AND SPRINKLE OVER THE BAKED SWEET POTATO MIXTURE. RETURN TO THE OVEN AND BAKE ANOTHER 15 MINUTES.
